Mosaic Restaurant is located in Scottsdale Arizona but I wish it was closer to where i live because this was just crazy good. Finally a restaurant where the flavors pop, theres nothing ordinary about these dishes. Here are a few dishes right off the website to give you a hint at what i mean.
GRILLED RUBY RED IDAHO TROUT & QUAIL EGG

TWELVE MUSHROOM RISOTTO
garlic scented wild mushroom ragout, Grana Padano, white truffle oil
MADAGASCAR PEPPER GRILLED INDIAN PANEER
turmeric scented cauliflower, potatoes & peas, whole wheat flatbread,
coriander-tomato concasse, tamarind raisin chutney
